Baked Hake with cheat salsa verde, wedges and tender stem broccoli

The last recipe in my 4 X Fish Friday series, and saving the best ( In my opinion!) for last. But I might be biased because our wedding celebration menu inspired this one! I just love a really fresh herby green salsa to brighten up even the greyest of days, but this cheat version is so simple and quick to knock up. It pairs really well with a simple meaty white fish like hake, but you could use this with any fish, prawns or even chicken!

As with most of my recipes, you can use what you have! I have mentioned a few options below so use what you have and try different combinations to find your own family favourite. The oven does a lot of the heavy lifting here, so it might seem fancy for a Tuesday but it’s actually a great mid-week dinner!

 

Ingredients

2 handfuls of 2-3 fresh herbs such as parsley, mint, coriander, basil, dill, and fennel fronds.

2 Tbs Olive oil

2 Tbs of Capers – Green olives or anchovies also work!

1 Tbs White wine vinegar/lemon juice

2 fillets of Hake or see options above!

2 Big baking potatoes

1 Packet tender stem broccoli – You could use tomatoes/sliced courgettes/ thinly sliced peppers

Salt and pepper

Method

Preheat the oven to 180 degrees. Slice the potatoes into wedges and pop into a roasting tray. Drizzle with olive oil and season with salt and pepper. Bake for 45 minutes.

While the wedges are on, make your salsa verde. Chop the capers and herbs roughly. Mix with the oil and vinegar in a little bowl. If you prefer a more refined smoother version you can whizz it up in a little blender but I like the texture a little chunkier. And less washing up for Chris!

Pop the fish and the broccoli on separate small baking trays.  Drizzle both with olive oil and season with a little salt and pepper.

Once the potatoes have been cooking for 3o minutes put the fish and broccoli in the oven and bake for 10 -15 minutes, until the fish is done. Check the fish after the 10 minutes are up, if it is not cooked through, is still opaque, give it another 3-5 minutes until the fish is cooked through and firm.

Once everything is cooked, drizzle half of the salsa over the fish and serve the rest on the side.
