Tahini & Hot Honey Dressing

This works well with a big salad - Here I used a bag of mixed leaves, roasted butternut squash, raw tomatoes, butterbeans, pomegranate seeds and feta. It is also great to drizzle over roasted chickpeas as a side dish, or simply used to dress a bag of mixed leaves.

Tahini is similar to peanut butter but is made from blended sesame seeds (NB do not eat if you have a sesame allergy!!). It’s used in hummus, babaganoush, halva, in salad dressings or mixed with yoghurt to go with roast veg. It’s also delicious on toast with honey!

Nutritionally, tahini is rich in vitamins, primarily B1 and B6, as well as micronutrients such as magnesium, calcium, iron, and phosphorous. Tahini is energy-dense, due to its high fat content, but these are mainly ‘healthy fats’ (a mix of mono and poly-unsaturated fats). Tahini also provides some plant protein – about 3 g per tablespoon!

Dressing Ingredients

3 tbsp tahini

1 tbs hot honey

Juice of half a lemon

Salt and pepper

30 – 40 ml water

Method

Mix the tahini and honey until combined. Whisk in the lemon juice and mix well. season with salt and pepper.

Using a whisk slowly add the water to reach your desired consistency.
